Saturday Brunch: Fried Chicken & Waffles

I’ll be honest, before a few years ago, I had never tasted fried chicken and waffles. I remember hearing about it and thinking that it was a very odd combination. Then, I attempted my first stab at the southern dish via Bobby Flay. After that, I tried a few restaurant versions and determined to create my own twist on the classic.

I made this meal last weekend. I had been craving fried chicken and waffles for nearly a week at that point and I was dead set on eating that for breakfast Saturday morning. I used deboned chicken thighs and seasoned the flour with salt, pepper, paprika, and chili powder.

Now, I was at Target a few days before and I picked up what I thought was coconut oil on clearance. NOPE. It turns out it was pork lard. So, that’s what I used to fry the chicken. No regrets. For the waffles, I used the waffle portion from this recipe. I purchased this Black & Decker waffle iron nearly 5 years ago for about $30 from Kohl’s. Definitely the best thing I have every bought at Kohl’s. A close second is a really cute Lauren Conrad romper.

Now, for the sauce, I really just kinda winged it. I love the sweet and spicy sauce that Rocket to Venus uses for their fried chicken and waffle sandwich, but I wasn’t privy to the recipe. I assume mine comes close enough.

Sweet & Spicy Sauce

1/2 cup Frank’s Red Hot

1/2 cup honey

1 tbsp maple syrup
